Ingredients
- 300 g basmati rice (1½ cups)
- 720 ml milk (3 cups)
- 5 medium apples (e.g., Gala), grated (about 3½ to 4 cups)
- 35 g maple syrup (about 5 tsp), divided
- ½ tsp ground cinnamon, divided
- Pinch of salt
- 1 tsp lemon juice
- Optional: 2 tbsp raisins
- To serve: Greek yogurt, sliced apples, crushed nuts
Method:
Cook the rice
In a pot, combine rice, 3 tsp maple syrup, ¼ tsp cinnamon, salt, and milk. Bring to a boil, then reduce heat to low. Cover and cook, stirring occasionally, until the rice is soft and slightly sticky — about 15–17 minutes.
Prepare the apple layer
No need to peel! Grate apples by hand or in a blender. In a bowl, mix with ¼ tsp cinnamon, lemon juice, and 3 tsp maple syrup (adjust to taste). Add raisins if using.
Assemble
