What Happens If You Only Have 10 Minutes to Eat?

Ingredients (1 serving):

  • 1 piece of salmon (with skin!)
  • ½ cup cooked rice (or leftovers from yesterday)
  • 1 heaping spoon of coconut milk (the thick part)
  • 1 tsp olive oil (plus extra for salad)
  • 1 tbsp lemon juice
  • Salt + pepper
  • 5 asparagus spears
  • 1 green onion

For the salad choose your greens:

  • We used: 1 kale leaf, arugula, parsley
  • Plus: 2 small tomatoes
  • Olive oil + lemon juice (just a few drops each)

Method:

  • Cook rice (if needed). That’s all the time you’ll need for prep.
  • Season salmon (with skin!) with half the lemon juice, salt, and pepper – only on one side, the one without skin.
  • Chop asparagus and green onion.
  • Prep your salad:
  • Pick your greens – we used kale, arugula, and parsley.
  • Chop everything, add chopped tomatoes, toss with olive oil + lemon juice.
  • Set aside.
  • Heat a pan (medium).
  • Add 1 tsp olive oil.
  • Place salmon skin-side down (important).
  • After 1 min, flip it – now the skin is soft and will peel off like a sticker.
  • Add remaining lemon juice + pinch of salt on top.
  • Add chopped asparagus, green onion, and coconut milk to the pan.
  • Mix gently and cover with a lid. Steam on low heat for 2 minutes.
  • Remove lid, flip fish, reduce sauce if needed.
  • Taste and add garlic/chili if you like heat.
  • Serve: rice → salmon → sauce → salad.
