The Crumble That Disappeared

Ingredients
Crumble topping & base:

  • 100 g old-fashioned oats (about 1 cup)
  • 180 g all-purpose flour (about 1½ cups)
  • 60 g brown sugar
  • 2 tsp erythritol (or other sweetener)
  • 1 tsp baking powder
  • Pinch of salt
  • 130 g cold butter, cubed
    Fruit filling:
  • 600–700 g mixed fruit (fresh or frozen) – like strawberries, blueberries, etc.
  • 1 tsp cornstarch
  • ¼ tsp cinnamon
  • 1 tsp brown sugar

Instructions

  1. In a bowl, mix all crumble ingredients: oats, flour, sugars, baking powder, salt, and cold butter. Blend or rub together with fingers until crumbly lumps form.
  2. Line a baking dish with parchment paper.
  3. Press half of the crumble mixture into the bottom and edges of the dish. Use a flat glass to press it down evenly.
  4. In another bowl, toss the fruit with cornstarch, cinnamon, and brown sugar. It doesn’t matter if the fruit is fresh or frozen.
  5. Pour the fruit over the base and spread evenly.
  6. Sprinkle the rest of the crumble mixture on top.
  7. Bake at 380°F (195°C) for about 50 minutes, until golden on top and bubbling.
  8. Serve warm or cooled, with yogurt or ice cream.
  9. If – by a miracle – it survives the night, reheat in the microwave the next day.
