Banana Bread with Apple & Greek Yogurt
Ingredients

  • 3 very ripe large bananas, mashed (about 1⅓ cups)
  • 2 room-temperature eggs
  • ⅓ cup (104 g) pure maple syrup (not honey)
  • ½ cup (113 g) Greek yogurt
  • 1¾ cups (198 g) whole wheat or white flour
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 6 tbsp (85 g) melted, cooled butter
  • 1 small apple, peeled and chopped
  • Optional:
     o ½ cup (56 g) chopped walnuts or pecans
     o ¼ cup (50 g) chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper. In a large bowl, mash bananas. Add eggs, maple syrup, yogurt, and melted butter. Mix well.
  2. Add flour, baking soda, cinnamon, salt, and chopped apple (plus nuts or chocolate chips if using).
  3. Mix quickly and gently – do not overmix.
  4. Pour batter into the pan. Bake 50–60 minutes, or until a tester comes out clean.
